Lazy Slow Cooker Shredded Chicken Fajita Recipe

Want to know how to make dinner super easy?

Here’s a low effort shredded chicken fajita bowl recipe - one that I made last week! Great for saving time on busy days. I recently got a slow cooker and I’m trying to learn how to use it - if you have tips pls let me know!!

Ingredients:

• Chicken breast

• Seasoning packet (see bottom of caption for alternative suggestions)

• Bell peppers

• Rice or tortilla shells (for serving)

• Water (or chicken broth)

• Onion (optional)

• Guac, sour cream, other toppings

Directions:

1. Slice bell peppers. Place in slow cooker. Add any additional vegetables you may like.

2. Cover bell peppers in spices. I used approximately half of a 1oz spice packet. You can alternatively use my recommended spices below.

3. Add 1/2 cup water (or chicken broth). Stir.

4. Add the chicken breasts. Mix them with seasoned vegetables.

5. Cook on low for 6 hours or until the chicken is fully cooked.

6. Serve with juices or strain. Serve on rice or tortillas with toppings like sour cream, salsa, guacamole, jalapeños, etc. Enjoy!

Additional notes: no seasoning packet? My favorite seasonings to use are paprika, chili powder or chipotle chili powder, garlic, onion powder, cayenne powder, salt, and cumin.

Want the bell peppers more firm? Add them into the crockpot within the last few hours of cooking so they’re not soft.

And if you're feeling fancy, a Great Value Bay Leaf or two added to the slow cooker can really deepen the aromatic profile of your shredded chicken fajitas. For anyone just starting out with a slow cooker, like I was recently, here are a few tips I've picked up to make sure your slow cooker chicken with bell peppers and onions turns out perfectly every time: Don't Overcrowd: While it's tempting to cram in as much as possible, leaving a little space ensures even cooking and better flavor distribution.
