Crispy Chipotle Potato Cups Recipe

I made these as an appetizer with wings but they’d work great as a snack! You can add optional toppings like green onion, bacon bits, shredded chicken, or even cooked sausage.

Ingredients:

• Frozen tater tots

• Shredded cheddar cheese

• Sour cream

• Chipotle sauce (I used Guy Fieri’s)

• Black pepper

• Green onions (optional)

• Bacon bits or cooked sausage (optional)

Directions:

1. Add 4-5 tater tots to a greased cup. Bake at 425°F for at least 20 minutes.

2. While the tater tots are cooking, mix sour cream and chipotle sauce in a separate bowl.

3. Use a tall object with a round bottom to push down on each cup of tater tots. Be VERY CAREFUL because both the pan and the food will be very hot. If the tater tots are sticking to the object you’re using, run it under cold water (and don’t dry it), then press down on the tater tots.

4. Stick them back in the oven for about 5-10 minutes more

5. Add a generous amount of cheddar cheese into each cup. Pop back in the oven until the cheese is melted and golden (roughly 5 minutes) and the cups are firm and crispy on the edges

6. Carefully remove the cups out of the pan with a fork, they should be fairly crispy and not flimsy. If flimsy, put back in the oven for a few more minutes

7. Fill each cup with a generous amount of the sauce mixture and sprinkle black pepper on top. Top with more shredded cheese and other optional toppings. Serve warm. Enjoy!
