Looking for a Halloween treat that you can eat by itself, with a crumble, or in mini pies? I made homemade apple pie filling in under 10 minutes!

Ingredients:

• 3-4 Apples, peeled and cubed (I used Honey Crisp)

• 2 tsp Cinnamon

• 2 tbsp Butter

• 1/3 cup Sugar

• 1 tsp Vanilla

• Cornstarch slurry

Directions:

1. Melt butter with cinnamon and vanilla.

2. Turn heat up to medium and add apples and sugar. Mix well. Let cook for about 5-10 minutes or until the apples soften.

3. After the apples have softened, make a cornstarch slurry in a separate bowl (use 1 tbsp cold water and 1 tbsp cornstarch). Add into the apples and mix for a minute

4. Remove apples from heat and let cool for a minute or two. Enjoy warm!

Beyond mini pies and crumbles, this versatile filling is a game-changer for so many desserts and even breakfasts! Let me share some of my favorite ways to use it up, plus a few extra tips to perfect your apple filling every time. First off, let’s talk about those delicious diced apples and cinnamon. While Honey Crisp apples are fantastic, don't be afraid to experiment! Granny Smith offers a lovely tartness that balances the sweetness, Fuji or Gala apples provide a milder sweetness, and a mix of two or three varieties can add wonderful complexity to your filling. When dicing, try to keep your pieces relatively uniform so they cook evenly – nobody wants crunchy bits mixed with mushy ones! And while cinnamon is a classic, a tiny pinch of nutmeg or allspice can really elevate those warm fall flavors without overpowering the apple. I sometimes add a dash of vanilla extract with the butter for an extra aromatic touch too. Now, about that cornstarch slurry – it's the secret weapon for a perfectly thick and glossy filling! Many people wonder why we use cold water. The magic lies in preventing lumps. If you add cornstarch directly to hot liquid, it'll clump up instantly, leaving you with a grainy texture. Mixing it with cold water first ensures it dissolves smoothly, then thickens beautifully when added to your warm apple mixture. If your filling seems too thin after cooling, you can always make a little more slurry and gently reheat the mixture to thicken it further. On the flip side, if it's too thick, a splash of apple juice or water can help loosen it up. For those who prefer alternatives, a tablespoon of all-purpose flour or tapioca starch can also work, though cornstarch tends to give a clearer, glossier finish. And for those looking for a super-fast dessert, especially if you’re curious about apple pie with a tortilla crust – you're in for a treat! This is my ultimate hack for when I crave pie but have zero time for pastry. Just take some small flour tortillas, brush them lightly with melted butter, sprinkle with cinnamon sugar, and spoon a dollop of your warm apple pie filling into the center. Fold them into little packets or roll them up like taquitos. Pop them in a preheated oven at 375°F (190°C) for about 10-15 minutes, or until golden and crispy. They are absolutely divine served with a scoop of vanilla ice cream or a drizzle of caramel sauce – a perfect individual-sized, crunchy, and portable apple pie experience! Beyond these, think about using your filling as a topping for pancakes, waffles, or French toast for a decadent breakfast. Swirl it into plain yogurt, or spoon it over oatmeal for a comforting start to your day. It’s also incredible as a warm topping for vanilla ice cream, or even folded into cake batter for a moist, apple-spiced cake. The possibilities truly are endless once you have this quick, delicious apple pie filling. Enjoy experimenting and discovering your own favorite ways to savor it!
