Weekly Menu
This week’s menu is very much a reflection of who I am as a person…a planner.
I am not the kind of person who can just open the fridge and magically throw something together. If there isn’t a plan, we’re either eating cereal or ordering takeout. So having meals mapped out ahead of time is what keeps our evenings running smoothly.
This week is a mix of meals that take different levels of effort, plus two vegetarian options to balance things out. A lot of these are either recipes I’m trying for the first time or ones I haven’t made in a while, which makes it feel a little more fun than just repeating the same dinners over and over.
It’s not about being perfect or having the most efficient plan. It’s just about making sure future me isn’t stressed at 6pm trying to figure out what’s for dinner.
If you’re also someone who needs a plan to function, this is your reminder that writing it all out ahead of time really does make life easier.
Planning your meals for the week has always been a game changer for me when it comes to maintaining a balanced diet and avoiding last-minute takeout. One thing I’ve found particularly helpful is mixing meals that require different amounts of prep time. For example, pairing a quick-to-make dish like the easy 1-pan lemon chicken orzo with slower-cooked comfort foods such as the country fried steak or slow cooker BBQ pulled pork helps keep my week both manageable and exciting. Incorporating vegetarian options like black bean enchiladas not only adds variety but also makes meals feel lighter midweek. The enchiladas recipe is fantastic because it combines nutritious ingredients such as black beans and sweet corn with bold flavors from jalapenos and enchilada sauce, and it comes together quickly—perfect for a busy evening. Another recipe I love is the creamy French onion white beans, which provide a comforting yet protein-rich option with a rich depth of flavor thanks to caramelized onions, smoked paprika, and fresh herbs. Baking the onions and beans together creates a cozy dish that’s perfect for cooler days. One tip I always recommend is prepping some ingredients ahead of time, like dicing the onions and peppers or mixing the BBQ sauce, so when evening comes, meal assembly is smooth and stress-free. Also, using slow cookers or one-pan recipes can significantly reduce kitchen cleanup and make cooking more enjoyable. Overall, writing down your meals and planning your grocery shopping around them really eases evening stress. Future you will thank you when dinner is ready on time without scrambling through the fridge or resorting to less nutritious options. Whether you’re new to meal planning or looking for fresh ideas, blending different effort levels and including vegetarian meals can elevate your weekly routine beautifully.
