The recipe for the cheesecake filling is

•1 8oz block of cream cheese

•2/3 cup powdered sugar

•3/4 cup heavy cream

• 1 1/2 tsp vanilla extract

If you follow this video exactly you should get the PERFECT filling every time

**remember to pour the heavy cream in SLOWLY**

Room temperature cream cheese whips up smoothly and incorporates beautifully with the other ingredients, giving you that 'PERFECT CONSISTENCY' we all crave. Next, powdered sugar. Unlike granulated sugar, powdered sugar (confectioners' sugar) dissolves instantly, ensuring a smooth, non-gritty texture. It also helps stabilize the filling. And the heavy cream? This is where the magic happens for that 'FLUFFY' texture and how it 'HOLDS ITS SHAPE'. My secret, as shared in the video, is to pour it in *slowly*. Think of it as gently coaxing the cream into the mixture, letting it aerate and thicken gradually. If you dump it all in at once, you might overmix or end up with a thinner consistency. Vanilla extract, of course, just elevates all those rich flavors. Once you've got your beautiful, 'DELICIOUS FILLING', what can you do with it? Beyond traditional cheesecakes, this filling is incredibly versatile, just like my 'GO TO RECIPE' from my home bakery days where it was a 'BIG BIG SELLER'. Use it for 'POST CHEESECAKE CUPS', parfaits layered with fruit and graham cracker crumbs, as a filling for cupcakes, or even spread between cake layers for a rich, creamy frosting. I’ve even used it to fill mini tart shells for a quick dessert! Want to get fancy? Grab a 'PIPING BAG' and your 'MY STAR TIP' (I often use a 'WILTON' 1M tip for a classic look). This filling pipes beautifully and 'HOLDS ITS SHAPE' so well, meaning your desserts will look as professional as they taste. I love making beautiful swirls on top of my cheesecake cups or even decorating individual dessert plates. And for presentation, don't forget garnishes! I often prepare fresh fruit like strawberries. A simple trick I learned is how to easily slice them for a pretty fan or design. After washing, gently 'CUT THE TOP OFF' and carefully remove any remaining 'WHITE PART OFF'.
