RECIPE:

🧁 INGREDIENTS

Whipped Cheesecake Layer:

• 16 oz (450 g) cream cheese, softened

• ½ cup (100 g) granulated sugar

• 1 tsp vanilla extract

• 1 cup (240 ml) heavy whipping cream, cold

Pistachio Kataifi Mixture:

• 1 cup kataifi (buy the dried one in the bag)

• 2 tbsp unsalted butter, melted

• 2 tbsp tahini

• ¼ cup (60 g) pistachio spread or pistachio cream

Chocolate Ganache:

• ½ cup (120 ml) heavy cream

• ½ cup (85 g) semi-sweet chocolate chips

🍫 INSTRUCTIONS

1. Prepare the Cheesecake Layer:

• Beat cream cheese, sugar, and vanilla until creamy.

• In another bowl, whip the cold heavy cream to stiff peaks.

• Gently fold the whipped cream into the cream cheese mixture until smooth and airy.

2. Make the Pistachio Kataifi Layer:

• In a skillet over medium heat, toast crushed kataifi with melted butter until golden and crisp.

• Let it cool completely.

• Stir in tahini and pistachio spread until fully coated and slightly creamy (add honey if you prefer it sweeter).

• Texture should be soft but still have a light crunch from the kataifi.

3. Prepare the Chocolate Ganache:

• Heat the heavy cream until it just begins to simmer.

• Pour over chocolate chips and let sit for 1–2 minutes.

• Stir until smooth and glossy. Let it cool slightly before layering.

4. Assemble the Cups:

• Spoon whipped cheesecake into the bottom of each cup.

• Add a layer of the pistachio kataifi mixture.

• Drizzle chocolate ganache on top.

• Repeat the layers until full, finishing with a glossy ganache topping.

5. Chill:

• Cover and refrigerate for at least 2 hours before serving to set and develop flavor.
