Red Pepper Egg Bites
Starbucks Dupe!
2 cups egg whites
3/4 cup full fat cottage cheese
1/2 cup of Monterey Jack cheese
1/2 cup feta cheese
1 tbsp cornstarch
pinch of both salt and pepper
1/4 cup of roasted red bell pepper
1/4 cup of spinach finely chopped
2tbsp of green onion finely chopped
Preheat oven to 350
add egg whites, cottage cheese, both feta and Monterey jack, cornstarch and the salt and pepper to the blender. Blend for 30 seconds
add veggies to the bottom of the muffin tin (silicone muffins pan preferred). Add the egg mixture on top.
Bake for 22-25 minutes at 350. Allow 10-15 min for cooling. Store in an airtight container.
