Brunch shakshuka for two!

I love brunch—it adds a little extra somethin’ somethin’ that breakfast doesn’t always have to keep you satisfied all day long. This time, I made shakshuka with a twist: a hit of harissa for bold flavor, plus lentils and pulled pork to really fill you up without slowing you down.

What you need:

• 1 Tbs olive oil

• 1/4 onion finely chopped

• 1/2 red bell pepper finely chopped

• 2 tsp minced garlic

• 1 tsp smoked paprika

• 1 tsp cumin powder

• 1/2 tsp oregano

• Handful of chopped cherry tomatoes

• 1 Tbs tomato paste

• 1 Tbs harissa

• Salt and pepper

• 1 Tbs lentils

• 1/3 cup of water

• 2-4 large eggs

• Sprinkle of crushed red pepper flakes (optional)

• Feta and parsley for garnish

• Prepared pulled pork

• Toasted garlic baguette slices for dipping

What You Do:

1.) Heat up olive oil in a pan and add onions, bell pepper, garlic, paprika, cumin, oregano, and a pinch of salt and pepper. Cook until onions are translucent; careful not to burn the garlic.

2.) Add in your chopped tomatoes with the juice. Stir. Add tomato paste and stir again. Add a pinch of salt and sauté for 1 minute to allow tomatoes to break down slightly.

3.) Add Harissa, lentils, and water. Stir it all up. Cover and cook on low heat for 20 minutes.

4.) Remove lid and crush tomatoes slightly.

5.) Use a spoon to make little wells for each egg. Crack an egg in each well. Cook uncovered for 1 minute. Cover and cook for another minute. Sprinkle additional salt, pepper, and crushed red pepper if desired

6.) Garnish with crumbled feta and chopped fresh parsley. Add your pork and serve with toasted garlic baguette slices.
