Brown butter pistachio blondies, layered with a sweet kataifi pistachio filling for that dreamy Dubai-inspired touch 🥮💚

A little nutty, a little buttery, and oh-so indulgent ✨

Brown Butter Pistachio Blondies (1 stick butter)

Ingredients (8x8 pan, about 9 squares):

• ½ cup (1 stick) unsalted butter

• ¾ cup brown sugar (light or dark, packed)

• 1 large egg

• 1 tsp vanilla extract

• ¾ cup all-purpose flour

• ½ tsp baking powder

• ¼ tsp salt

• ⅓ cup shelled pistachios (toasted, chopped)

• Optional: ¼ cup white chocolate chips or chopped white chocolate

Method:

1. Brown the butter – Melt butter in a saucepan over medium heat until it foams, then turns golden with brown bits at the bottom and a nutty smell (4–6 mins). Remove from heat and cool slightly.

2. Whisk in sugar – Add the brown sugar to the butter and whisk until smooth and glossy.

3. Add egg + vanilla – Beat in egg and vanilla until well combined.

4. Fold in dry ingredients – Stir in flour, baking powder, and salt just until combined (don’t overmix).

5. Add pistachios – Fold in pistachios (and white chocolate if using).

6. Bake – Spread batter into a greased or parchment-lined 8x8 pan. Bake at 350°F (175°C) for 20–25 minutes, until edges are golden and center is just set.

7. Cool & cut – Let cool in the pan before slicing into squares.
