🍋 Lemon Basil Chicken with Roasted Veggie Medley 🍃

Craving something fresh, light, and satisfying? This dish is packed with protein, bursting with flavor, and full of anti-inflammatory goodness. Perfect for staying on track without feeling like you’re missing out.

✨ Ingredients (1 Serving):

For the chicken:

• 4 oz chicken breast

• Juice of ½ lemon

• 1 tsp olive oil

• 1 garlic clove, minced

• 1 tbsp fresh chopped basil

• Salt & pepper to taste

For the veggie medley:

• ½ cup chopped zucchini

• ½ cup chopped bell peppers

• ¼ cup sliced red onion

• ½ tsp olive oil

• Sprinkle of Italian seasoning

• Salt & pepper to taste

🔥 Directions:

1. Marinate chicken in lemon juice, olive oil, garlic, basil, salt, and pepper for 30 mins (or longer if you can!).

2. Preheat oven to 400°F.

3. Spread veggies on a lined baking sheet, toss with olive oil and seasonings. Roast for 20–25 mins, turning once.

4. While veggies roast, grill or pan-cook the marinated chicken until cooked through and slightly golden.

5. Serve together, garnish with extra basil or lemon zest!
