For the Quesadillas
4 large flour tortillas
1 zucchini, sliced into thin rounds
1 red bell pepper, sliced
1 small red onion, sliced
1 cup baby spinach
1/2 cup sliced black olives
1 cup crumbled feta cheese
1 cup shredded mozzarella cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and black pepper, to taste

1. Grill the Vegetables
Heat a grill pan or skillet over medium-high heat.
Toss zucchini, bell pepper, and onion with olive oil, oregano, smoked paprika, salt, and pepper.
Grill for 5–7 minutes, turning occasionally, until tender and lightly charred.
Add spinach during the last minute and cook until wilted.
2. Assemble the Quesadillas
Lay tortillas flat on a clean surface.
Sprinkle mozzarella on one half of each tortilla.
Add grilled vegetables, olives, and feta cheese.
Fold tortillas over to create half-moon quesadillas.
3. Cook the Quesadillas
Heat a lightly oiled skillet or grill pan over medium heat.
Cook quesadillas for 2–3 minutes per side until golden brown and crispy.
Press gently with a spatula while cooking to help melt the cheese.
4. Serve
Slice into wedges and serve warm with tzatziki, hummus, or a squeeze of lemon juice.
Garnish with fresh parsley or basil if desired.
