Hearty Instant Pot Beef Stew Recipe

Happy December! It’s cooling down so much in California. I love this time of year. Of course, I’ve been craving some comfort food. Beef stew is always a hit and so quick to make especially using the Instant Pot. I used ingredients that I had on hand as per usual.

PS I was accepted into an LVN program and starting in January 2025. After graduating, I will do a LVN to RN program. I can’t believe Christmas is in 2 weeks! This year is flying by so quick. 🎄❤️

Instant Pot Beef Stew Recipe

2 lbs beef stew meat

3 tbsp Herbes de Provence

4 stems fresh thyme

5 fresh sage leaves

2 tbsp sea salt & cracked pepper

1 yellow onion sliced

8 gold potatoes chopped

8 organic colorful carrots chopped

6 garlic cloves pressed

2 tbsp Worcestershire sauce

3-4 cups organic beef broth

Extra virgin olive oil (EVOO)

Optional: lion mane’s mushroom powder

Instructions

•Set the Instant Pot to the sauté function for 10 minutes. Add EVOO, then sliced onions until translucent. Add pressed garlic. Next, add the sea salt and pepper. Stir all together and add in the beef stew meat. Then the Herbes de Provence and stir to ensure all seasonings mixed with the meat. Cook until browned. Add potatoes and carrots to the Instant Pot. Finally, add the beef broth and Worcestershire sauce. Stir all together. Set the thyme stems on top and sprinkle the sage leaves. Set to manual pressure for 30 minutes. Press the valve until all steam is out. Remove the thyme. Serve but be very careful because it’s super hot.
