Beef & Shrimp Hot Pot Recipe

1 lb Hot pot beef chuck rolls (Costco)

1 lb raw shrimp (peeled & washed)

1 beef base pouch (including dried packet of seasonings)

4 colorful carrots sliced

1 large daikon sliced

2 tsp fresh grated ginger

1/2 large shallot minced

3 green onions (scallions) chopped

1 package seafood mushrooms

2 medium portabella mushrooms sliced

1/2 can of whole kernel corn (Trader Joe’s)

2 squashes, 1 yellow & 1 green sliced

1 small butternut squash sliced & deseeded

7 baby bok choy

1 baby Napa cabbage

1 package fresh udon noodles

Sea salt & cracked pepper

Instructions

Start with your broth, add your water, and mix it together, then once it boils, add in minced shallots, green onions, and grated ginger. Begin to add all your veggies, noodles, shrimp, and meat. As well as anything else you desire or have in the fridge.
