🤠 The Freshest Summer Cowboy Caviar You’ll Make All Season 🌽
A fun Friday summer night calls for fresh, colorful Cowboy Caviar with my lovely family.
This easy, flavor-packed dip is perfect for sharing and comes together in minutes. Serve it with your favorite tortilla chips, spoon it over grilled chicken or shrimp, tuck it into tacos or burrito bowls, or enjoy it on a bed of crisp lettuce for a fresh summer salad. However you serve it, it’s bright, refreshing, and always a crowd favorite. Enjoy 💛
Cowboy Caviar with Cucumbers & Queso Fresco
Ingredients
1 (15 oz) can black beans, drained and rinsed
1½ cups frozen corn, thawed
½ red bell pepper diced
½ red onion finely diced
1 cup cherry tomatoes diced
¼ cup chopped fresh cilantro
½ cup crumbled queso fresco
Dressing
3 tbsp olive oil
Juice of 1 lime
1 tsp chili powder
½ tsp ground cumin
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Instructions
1. Thaw the corn if frozen.
2. In a large bowl, combine the black beans, corn, bell pepper, onion, tomatoes, cilantro, olives, and jalapeño.
3. In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper.
4. Pour the dressing over the vegetables and toss until everything is evenly coated.
5. Refrigerate for 20–30 minutes to let the flavors meld.
6. Just before serving, gently fold in the avocado and top with crumbled queso fresco.

















































































































Currently pregnant and have been CRAVING this. Our recipes are similar but I’ve always added avocado and instead of making a dressing I’ve just tossed in lime juice. I’ve never had it with cheese but I would soooo try that 😍 #CookwithLemon8 #lemon8challenge
