It truly is a staple in our home, and making it from scratch makes all the difference in taste and texture. While the original post mentioned I didn't have block cheese to shred myself today, I usually swear by shredding my own. Why? Pre-shredded cheese often contains anti-caking agents like cellulose that can actually make your sauce a little grainy and prevent it from melting as smoothly as you'd like. For that perfectly luscious, creamy sauce that coats every single noodle, a fresh block of sharp cheddar – or a blend of yellow and orange cheddar for a vibrant, appealing color – is always my top recommendation. It melts into that glorious golden-brown cheese topping you saw in the photos, creating that irresistible crust! Speaking of cheese, don't be afraid to experiment beyond just cheddar! While cheddar is undeniably classic, I sometimes add a touch of Gruyere for a nutty depth, or even a little cream cheese (a couple of ounces) for extra richness and an incredible velvety texture that's pure indulgence. It really elevates the flavor profile without making it overly complicated. And for the baking part, I completely understand the "no crusty edges" dilemma. My kids are the same – they want gooey, not crunchy! To ensure it stays lusciously creamy and avoids getting too dry or crusty, I always cover the baking dish tightly with foil for the first 15-20 minutes of baking. This traps the moisture, allowing the cheese to melt beautifully and the pasta to absorb the sauce without drying out. Then, I remove the foil for the last 5-10 minutes to get that beautiful melted, bubbly, slightly tanned cheese on top without it drying out completely. The goal is always gooey perfection, not a brick! Another little trick I've learned for super creamy mac and cheese is to ensure your béchamel sauce (the base of milk and roux) is perfectly smooth and lump-free before you even think about adding the cheese. Gradually adding the shredded yellow and orange cheese in batches off the heat, stirring until each batch is fully melted before adding the next, also contributes to that silky smooth consistency. And don't forget the seasonings! Sometimes, I even add a dash of mustard powder to the béchamel for an extra layer of savory flavor.
