•2lbs mini yukon potatoes
•5 strips of bacon crumbed
•1 cup shredded cheddar cheese
•1 cup shredded colby jack cheese
•1/4 cup melted butter
•1/4 cup oil
•1 tbsp garlic, and onion powder
•2 tsp seasoning salt
•1 tsp paprika, and italian seasoning
•chives
•Boil potatoes in salted water until fork tender. About 15 minutes. Drain
•Preheat the oven to 425
•Smash each potato carefully.
•Add the melted butter, oil, and all the spices into a bowl and mix until fully combined.
•Brush the mixture onto all the potatoes.
•Bake for 10-15 minutes.
•Top with cheese and bacon and bake until melted.
•Top with chives and serve with sour cream or ranch.
