Balanced Mom breakfast that keep me full
These days my breakfasts are simple, balanced, and filling. Eggs, fruit, yogurt , nothing complicated, just what works and keeps me satisfied. It’s a realistic way to start the morning, especially on busy mom days.
For the scrambled eggs
Melt butter in a nonstick skillet over low-medium heat, add beaten eggs with a pinch of sea salt, and gently stir until soft and just set. Finish with freshly grated Parmesan and cracked black pepper on top, and serve warm.
For the Over Medium eggs
Heat butter in a skillet over medium heat, crack in the eggs, and let them cook undisturbed until the whites are fully set but the yolks are still runny. Season with sea salt and finish with freshly cracked black pepper before serving.
Toast bread and spread with mashed avocado, then top with kimchi and a sprinkle of sea salt and pepper for a savory, flavorful bite. For the rice cake, warm it until lightly crisp, spread with avocado, and finish with kimchi on top
