Chicken Tortilla Soup

Tried and true! Even my 4 yr old will eat this 👏🏻

Delicious and great leftover!

Recipe:

2 TBS Olive oil

1 small onion

2/3 cup fresh, chopped cilantro

3 cloves garlic, minced

4+ cups chicken broth

14.5 oz can diced fire roasted tomatoes

1 can rotel hot

2 chicken breasts shredded

1 cup corn

1 can black beans

2 carrots

3/4 tablespoon cumin

1/2 tablespoon chili powder

1/8 teaspoon cayenne pepper

1-2 bay leaves

Serve with sour cream, avacado and Monterey Jack Cheese.
