Any mixing bowl add 110 g of sourdough discard 250 g of warm water 1 packet of fast acting yeast (7g) 25 g of sugar Mixed together Next add 500 g of bread flour ( you can also use all purpose flour) 8g of salt Combine and next for five minutes or kneed. That rest for 1 1/2 to 3hrs. Depending how warm your house is once a doubles in size. It’s done proofing. On a clean surface with a little bit dusted flour, turned out out and cut the into eight pieces rolling into balls let them rest for 20 minutes. Preheat your oven at 400. Once rested poke a hole in the middle of the ball stretching out gently to make a hole. Once all the dough balls are shaped into bagels let them rest for 20 minutes. Start to boil some water with a tablespoon of sugar and a teaspoon of baking soda. Once it starts simmering in 20 minutes, have passed for the bagels to proof boil the bagels on each side for 30 seconds. Then place on a parchment line baking sheet. Sprinkle whatever topping you want and bake for 30 minutes.
