Chicken & Dumplins
Hey everyone! If you're anything like me, you love a good homemade meal but sometimes time just isn't on your side. That's where this amazing chicken and dumplings recipe comes in. It's truly a lifesaver for busy weeknights and, honestly, tastes like you slaved over it all day. The best part? We're using refrigerated canned biscuits for the dumplings – yes, really! Let’s start with the chicken. I usually go for boneless, skinless chicken breasts or thighs because they're super easy to shred. Just pop them into a pot of water or, even better, chicken broth, and let them boil for about 30-35 minutes. You want them fully cooked and tender enough to easily pull apart. While they're simmering, you can get your other ingredients ready. Once cooked, take the chicken out, let it cool slightly, and then start shredding chicken using two forks. It’s so satisfying! Now, for those magical canned biscuits! This is where the 'easy' factor really shines. I pick up a can of flaky, buttery biscuits from the refrigerated section of my grocery store. On a lightly floured surface, you’ll want to flatten each biscuit a bit with your hands or a rolling pin. Then, cut each biscuit into squares – I usually aim for about 6-8 squares per biscuit. Don't worry about perfection; rustic is part of the charm! This simple trick saves so much time compared to making dough from scratch. Back to the pot! If you used water to boil the chicken, now's the time to add in some good quality chicken broth to make your base. You'll want enough to fill the pot half way once the chicken is back in. Bring the liquid to a light simmer. This is crucial: don't let it boil too vigorously before adding the dumplings, or they might break apart. Once it's at a light boil, add the dumplings in one by one. You'll want to stir often but gently, especially at the beginning, to prevent them from sticking to the bottom of the pot. Keep them simmering until they are puffed up and cooked through. How do you know when dumplings look/taste done? They'll be fluffy and light, no longer doughy in the center. Once your dumplings are perfect, then add the shredded chicken back into the pot. This is also when I like to add in the last half of butter (the OCR mentions using half a stick at the beginning and the rest at the end – this last bit adds a wonderful richness!). I also add a generous amount of pepper and a pinch of salt if needed. For extra flavor, don't be shy with seasonings like garlic powder, onion powder, or a dash of dried thyme. If you find your broth isn't quite as thick as you'd like, the OCR mentions it's optional but makes it slightly thicker. My trick for this is to mix a tablespoon of cornstarch with a little cold water to make a slurry, then stir it into the simmering broth. Let it cook for a few minutes until it thickens to your desired consistency. Some people even like to add a splash of heavy cream for an even richer, creamier texture. This dish is pure comfort in a bowl, perfect for warming you up on a chilly evening. It's become a family favorite in my household because it’s hearty, satisfying, and incredibly simple to make.
