Blueberry Muffins
INGREDIENTS
3 1/4 cup All Purpose Flour
1 1/4 cup Granulated Sugar
1/8 cup Baking Powder
1/4 tbsp Salt
2 Large Eggs Room Temperature
1 1/8 cup Whole Milk Room Temperature
3/4 Vanilla Extract
3/4 cup Butter Unsalted Melted
3/4 cup Blueberries or any add in you prefer
DIRECTIONS
1. Preheat the oven to 350 °F. Prepare muffin tins with grease or paper liners.
2. Sift the dry ingredients.
3. Whisk together the eggs, milk and vanilla. Once combined, stream in the melted butter slowly, while whisking, to help emulsify the mixture.
4. Add liquids to the dry, folding gently with rubber spatula just until combined. Note: If you combine butter with cold liquids, it will harden in the batter. Make sure to use room temperature liquids.
5. In a small bowl, toss the blueberries (or other optional listed substitutes) in approximately 1 Tbsp. of the flour mixture. This will help suspend the pieces in the batter and/or prevent color leaking into the batter. Gently fold the tossed pieces into the batter, being careful not to break them up.
6. Portion into prepared muffin tins. I use an ice cream scoop.
7. Fill almost to the top for full volume.
8. Bake at 350 °F for about 20 minutes, or until lightly brown and firm in the center. A toothpick will release cleanly.
