The Best Blueberry Muffins

I would have to say these are one of the best muffins I’ve ever had! They’re soft and fluffy with a golden color on the outside. They are SO GOOD heated in the microwave! #blueberry #blueberrymuffins #baking #recipes #desserts

Ingredients;

* 1/2 c. unsalted butter, melted

* 1 c. granulated sugar

* 2 large eggs, room temp

* 1 tsp. vanilla extract

* 6 Tbsps. greek yogurt

* 6 Tbsps. buttermilk (or milk)

* 1 Tbsp. baking powder

* 1/2 tsp. salt

* 2 c. + 2 Tbsps. all-purpose flour

* 2 c. Blueberries, fresh or frozen

* Turbinado sugar, optional

Method;

1. Preheat oven to 425*F. Grease a 10 standard size muffin tin with cupcake liners. Set aside.

2. In a large bowl combine granulated sugar and melted butter, whisking until combined.

3. Add eggs in one at a time. Add the greek yogurt, milk, and vanilla extract and mix well.

4. Add 2 cups of flour, baking powder, and salt. Use a silicone spatula to fold the batter together until it mostly comes together — it’s okay if it’s a little lumpy. You don’t want to over mix it! Add the blueberries and extra tablespoons of flour to the batter. Fold the blueberries into the batter, mixing only until combined.

5. Bake for 5 minutes at 425*F, then turn oven down to 375*F and bake for an additional 15 minutes, until muffins are golden brown and spring back to the touch. Remove from oven and allow to cool for at least 15 minutes before eating. Enjoy!
