1 2/3 cup All-purpose flour
2 teaspoons Baking powder
1/2 teaspoons Baking soda
1/3 cup Cocoa powder(dutch processed or natural)
1 cup Semi-sweet chocolate** for melting
3/4 cup Unsalted butter (room temperature)
1 1/2 cup Granulated sugar
2 Whole eggs
1 1/8 teaspoon Vanilla extract
1/2 teaspoon Kosher salt
1 cup Chocolate chips for add ins
**Use good quality semi-sweet chocolate chips, or bar
chocolate.
**Inclusions can be any type of chocolate chip, white
chocolate, peanut butter chips, and nuts of your choice.
DIRECTIONS
1. Preheat the oven to 350 °F. Line 2 - ½ sheet pans with parchment paper.
2. Sift the flour, cocoa powder, baking soda, and baking powder.
3. Melt the butter and chocolate in a bowl over a simmering pot of water on low heat. Make sure that the chocolate and butter do not exceed 120 °F.
4. Remove the chocolate mixture from the stove. Scrape down the sides and the bottom of the bowl until completely blended, set aside to cool to about 85 °F.
5. Combine eggs, and the sugar. Once the eggs are blended add vanilla and salt. Mix until incorporated, but do not whip.
6. Fold the chocolate and butter into the egg mixture until well blended, and there are no streaks.
7. Fold in the sifted dry ingredients, scraping down the sides and the bottom of the bowl.
8. Before adding the chocolate chips to the dough, make sure that the dough temperature does not exceed approximately 80 °F.
9. Fold in the chocolate chips or other inclusions.
10. Scoop cookies and stagger on the pan for even heat distribution.
*If the dough is very stiff, gently flatten the cookies with the heel of your hand before baking.
11. Bake for 12-14 minutes, until the edges are firm to the touch, but still soft in the center.
