Ingredients:

1/4 of breakfast sausage tube

1/2 small onion

6-7 eggs

3-4 tbsp of Greek yogurt or cottage cheese

Splash of milk

Garlic powder

salt

pepper

instructions:

Preheat the oven to 350° cook for 20 minutes

drizzle a little olive oil or butter and cook sausage on medium heat if you have links remove the casing halfway through throw the onions in

While the sausage cooks put the eggs and yogurt/cottage cheese and milk in a bowl whisk then add seasoning halfway through whisking

After the sausage and onions are done put them in a muffin tin I didn’t need to spray the tin It slid right out but if your worried spray it or butter it up

Then after everything you want is in the muffin tins fill the remaining space with eggs

P.S: Sorry if the measurements are a little off I eyeballed everything

I've experimented quite a bit with storing my homemade egg bites, and I'm excited to share some of my go-to packaging ideas and tips that I've found work best for keeping them perfectly delicious throughout the week (or even longer!). First off, let's talk about why packaging matters. Beyond just keeping them from drying out, good packaging helps maintain their flavor, texture, and most importantly, keeps them safe to eat. Whether you’re packing them for a busy work week, a quick grab-and-go snack for the kids, or even for a weekend brunch, having them properly stored makes all the difference. My favorite method for daily meal prep is individual airtight containers. You can find small glass or BPA-free plastic containers that are perfectly sized for one or two egg bites. I usually let my egg bites cool completely on a wire rack first – this is super important to prevent condensation inside the container, which can make them soggy. Once they're cool, I pop them into their individual containers. This way, they're ready to grab straight from the fridge each morning. They usually stay good for about 3-4 days this way. If I'm thinking longer-term, say for a whole week or even a month, I turn to the freezer. For freezing, I have a couple of tricks up my sleeve.
