Italian inspired Avocado breakfast sandwich

Ingredients

5 cherry tomatoes

1 egg

1 avocado

Goat cheese

1 Everything bagel

Olive oil

Salt

Garlic

Italian seasoning

Parsley

Thyme

Lemon juice

Oregano

Paprika

Onion powder

Juice from a jar of olives

Let’s make iiittt

wash and Slice your cherry tomatoes. Toss with olive oil ( I used a garlic and rosemary olive oil ) salt,garlic and Italian seasoning. Pop em in the oven at 350 for 40 minutes!

When those are close to finishing make a sunny side up egg topped with parsley and thyme. Next make the avocado mash. Cut and pit the avocado then smash it in a bowl. Add in a splash of the olive juice and lemon juice. Season with oregano,salt,pepper,paprika,garlic powder and onion powder.

Take the tomatoes out.

Spread the avocado on the bagel and then sprinkle goat cheese. Follow with the tomatoes and egg.

And there ya have it:) it’s basically eggs in purgatory on a bagel:)
