Tasty Recipe- Tomato and Shrimp Chickpea Pasta
I love pasta and wanted to make something a little different! I threw this together, and it turned out so good I had to share! Again, I don't do measurements, but I will try my best for this recipe!!
Ingredients:
Olive oil or salted butter
1 white or yellow onion, chopped
1 tablespoon minced garlic (or Jar-lic)
1 cup small cherry tomatoes, halved
1 28-oz can crushed tomato sauce
1-2 lbs of peeled medium shrimp (frozen or fresh)
1 8-12 oz box of chickpea pasta (whatever shape you like)
1 tablespoon of lemon juice
Salt n Pepper, to taste
Dried italian seasoning, to taste
Fresh, chopped basil, to taste
Shredded parmesan cheese, to taste
Directions:
1. Make pasta. Boil a pot of salted water and boil pasta following package instructions.
2. In a large saute pan, drizzle oil in pan and lightly cook shrimp. Do not overcook. Only cook until shrimp just turns pink. Remove shrimp from the pan and put aside.
3. In the same saute pan, drizzle oil. Throw in onions, garlic, and tomatoes. Stir. Place lid on pan to sweat the vegetables. Frequently check and stir vegetables, so they do not burn.
4. When vegetables are soft, sprinkle with salt, pepper, and lemon juice. Stir.
5. Stir in crushed tomato sauce. Sprinkle in more salt & pepper and italian seasoning. Let sauce simmer for 5-10 minutes. Stir occasionally. Taste sauce and add in additional seasoning to fit your preferences.
6. Stir cooked shrimp and boiled pasta into sauce. Let simmer for an additional 2-3 minutes.
7. To finish dish, top with fresh basil and parmesan cheese.
