Crispy Parmesan Baby Potatoes

1 lb baby potatoes, halved
20g melted butter
75g grated Parmesan cheese
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon spice mix of your choice (e.g., Italian seasoning)
1 teaspoon chili flakes
Instructions:
Boil the Potatoes:
Wash the baby potatoes and cut them in half. Place them in a pot of salted water and boil for about 10 minutes until slightly tender but not fully cooked. Drain and set aside.
Prepare the Seasoning:
In a small bowl, combine the melted butter, Parmesan cheese, salt, black pepper, spice mix, and chili flakes. Stir until well combined.
Season the Potatoes:
Place the halved baby potatoes cut-side up on a baking sheet. Brush each one generously with the butter-Parmesan mixture and sprinkle extra Parmesan on top.
Bake the Potatoes:
Preheat your oven to 220°C (430°F). Bake the potatoes for about 30 minutes, or until they become crispy and golden brown on the outside.
