Louisiana Creamed Corn
This corn dish is also known as Maque Choux which is a combination of Native American and Cajun. It’s a delicious medley of corn, peppers and onions that’s cooked in bacon grease with cream added. If you haven’t tried this Louisiana corn dish you’re in for a real treat and it will probably become one of your favorites. This is a must try with fresh summer corn it’s incredibly delicious.
Ingredients:
5 slices bacon
4 ears corn kernels removed
1 red bell pepper diced
1/2 sweet onion chopped
2 tablespoons flour
2 teaspoons creole seasoning
1 c heavy cream
Salt and pepper
2 scallions chopped green parts only
Directions:
Cook the bacon in a large skillet and remove when crispy and chop. If there’s a lot of fat left in the skillet remove some and save for later use. You should have about 3-4 tablespoons. In a large bowl toss the corn, peppers, onions, flour and creole seasoning together until well combined.
Pour into the hot bacon grease and cook for about 5 minutes until the vegetables caramelize. Stir in the cream and season with salt and pepper and cover for about 20 minutes at a low simmer stirring occasionally. Top with chopped bacon and scallions.
