🍚✨ 30-MIN COZY MEAL PREP: 卤肉饭 (Lu Rou Fan)

Nothing hits like a warm bowl of Lu Rou Fan (taiwanese braised pork rice) after a long day /raining cozy typa day🥹

-rich, savory, melt-in-your-mouth pork belly + braised eggs over fluffy white rice = instant comfort.

disclaimer: should you want a deeper, stronger flavour, just let the gravy simmer longer on low heat, totally worth it 😮‍💨

🛒 Ingredients

• 1½ lb skin-on pork belly, cut into ½-inch strips

• 2½ tbsp rock sugar

• 2 medium shallots, diced (i used fried shallots)

• 8 shiitake mushrooms, diced

• ¼ cup cooking wine

• 3 tbsp light soy sauce

• 2 tbsp dark soy sauce

• ¼ tsp white pepper

• 2 cups water

• 4 hard-boiled eggs, peeled

choose to add either one below

• ½ tsp five-spice powder OR

• song fa braised spices (ntuc/fairprice), throw all in

To serve:

• Steamed white rice (thai jasmine rice)

• Veggies of choice (bok choy)

👩🏻‍🍳 Steps

1️⃣ Bring a pot of water to a boil. Blanch pork belly for 5 mins, drain, rinse off scum, and set aside.

2️⃣ Heat the pan & add 2/3 tbsp of water. Add rock sugar and let it melt. Add shallots, turn heat to medium-high, stir-fry for 1 min. Once done, add shiitake mushrooms and stir-fry another 1–2 mins.

3️⃣ Add pork belly & stir fry for 2 min, Add cooking wine, light soy, dark soy & water. Stir and bring to a boil.

Once boiling, add five-spice powder OR song fa braised spices, white pepper & eggs.

4️⃣ Lower heat, cover and simmer:

• ⏱️ 15–20 mins for quick meal prep

• ⏳ 1–1.5 hrs on low heat for deeper, richer flavour

5️⃣ Turn heat to medium-high to thicken sauce (about 5 mins).

Sauce should coat a spoon but still be generous 🤍

Serve over rice with veggies & enjoy ✨
