同じ「抹茶パウンドケーキ」でも、濃厚しっとりに仕上げたいときは“混ぜ方”と“焼き上がりの見極め”で差が出ました。私が作ってみて特に効いたポイントをまとめます。 まず、卵・牛乳・砂糖を混ぜたあとにサラダ油を加える工程。ここでしっかり乳化させる（全体がトロッとして分離しない状態）と、バターなしでも口どけがぐっと良くなりました。油は癖のないものならOKですが、香りが強いオイルだと抹茶の風味が負けやすいので、私はサラダ油や米油が使いやすかったです。 次に抹茶の扱い。抹茶はダマになりやすいので、ホットケーキミックスと一緒に先に軽く混ぜてから加えると、色ムラが出にくく「濃厚」な見た目になります。さらに、粉を入れてからは混ぜすぎ注意。粉っぽさが消えるまで混ぜたら、仕上げに“20回だけ”混ぜるイメージにすると、しっとり感が残りやすかったです（混ぜすぎると生地が詰まって重くなりがち）。 具材を入れるなら、甘栗・黒豆・ナッツが相性抜群でした。甘栗は砕いて入れると生地となじんで、噛んだときに甘みがふわっと広がります。入れたら「ざっくり」混ぜる程度にして、混ぜすぎないのがコツです。 焼き方は180℃で約40分が目安ですが、オーブン差があるので竹串チェックがおすすめ。中心に刺してドロッとした生地が付かなければOK。もし表面が早く濃く色づくなら、途中でアルミホイルをふんわり被せると、抹茶の深いグリーンを保ちつつ中までしっとり焼けました。 最後に「しっとり」を確実にする裏ワザ。焼き上がりはすぐ切らず、粗熱が取れたらラップで包んで半日〜一晩置くと、生地の水分が落ち着いて驚くほどしっとり濃厚になります。抹茶好きほど沼る食感になるので、ぜひ寝かせてから食べてみてください。
