Carrot Cake
4eggs
1½ C. cooking oil
½ tsp. salt
2 C. sugar
2 tsp. cinnamon
2 C. all purpose four
1 C. chopped pecans (reserve
2 tsp baking soda
12 halves for garnish)
3 C. carrots, grated
In a large bowl beat eggs well with mixer until lemon colored and fluffy, alter 5 minutes, blend in oil and then slowly beat in sugar. In a medium bowl sift together, flour, soda, salt and cinnamon, then add. chopped nuts. Fold dry ingredients and grated carrots into batter, Grease two or three 8" cake pans and distribute batter evenly. Bake for 35 minutes or until layers pull away from sides of pans. Cool completely before icing.
Icing
8 oz. cream cheese, softened
1 (16 oz.) box powdered sugar
1 stick butter, softened
2 tsp. vanilla
In a large bowl, cream softened creum cheese and butter together with mixer until smooth and free of lumps. Add powdered sugar gradually and blend well, Add vanilla and mix. Spread icing evenly
