Chinese tomato 🍅 and beef 🥩 soup

🍅 Chinese Tomato & Ground Beef Soup with Kimchi

🥘 Ingredients
• 1/2 lb (225g) 93% lean ground beef
• 2 medium tomatoes, chopped (~180g)
• 2 cloves garlic, minced
• 2 cups low-sodium beef or chicken broth
• 1/2 cup kimchi, chopped (~100g)
• 1 egg, beaten
• 1 tsp sesame oil
. 1 1/2 tbsp soy sauce
• 1 tsp cornstarch (optional, for slight thickening)
• 1–2 green onions, chopped
• Salt & white pepper to taste
(Soy sauce omitted from macros)

🔪 Directions
1. Cook the beef:
Heat a little oil in a pot over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
2. Add aromatics:
Stir in garlic and white parts of the green onion. Cook 30 seconds.
3. Add tomatoes & kimchi:
Toss in chopped tomatoes and kimchi. Cook until soft and juicy, 3–4 minutes.
4. Simmer:
Pour in broth and sesame oil. Bring to a boil, then simmer 5–10 minutes.
5. Add egg:
Drizzle the beaten egg slowly into the soup while stirring in a circular motion.
6. Finish:
Season with salt and white pepper. Garnish with the green onion tops.
