Another Easy Dinner Idea!!
Honey pineapple jerk chicken, yellow rice, and creamy potato salad 🤤✨
Sweet, spicy, and sooo comforting… this plate did what it needed to do!!

🍯🍍 Honey Pineapple Jerk Chicken
• 4–6 chicken thighs
• 1/2 cup pineapple juice
• 1/4 cup honey
• 2 tbsp soy sauce
• 1–2 tbsp jerk seasoning
• 3 cloves garlic (minced)
• 1 tbsp oil + spices
Mix everything, marinate at least 1 hour (overnight is better).
Bake at 375°F for 40–50 mins, broil at the end for that glaze 😮🔥
🍚 Yellow Rice
• 1 cup rice
• 2 cups chicken broth
• 1 tbsp butter
• 1/2 tsp turmeric or Sazón
Cook covered on low 15–18 mins, fluff & let sit.
🥔 Potato Salad
• 4–5 potatoes (boiled & chopped)
• 1/2 cup mayo + 1 tbsp mustard
• 2 boiled eggs
• Celery, onion, relish (optional)
Mix everything, chill 1 hour, sprinkle paprika on top 💛
Spoon that jerk sauce over the rice and thank me later 😏
