The beauty of a Mexican Happy Plate is its simplicity and adaptability. While there are many versions out there, my go-to typically starts with a base of fluffy, well-seasoned Mexican rice. I love making mine with a little tomato paste, garlic, and chicken broth for that authentic taste. It’s worth taking the extra few minutes to get the rice just right, as it forms the perfect foundation for all the other delicious layers. Next up is the protein, and this is where you can really customize. My personal favorite is either succulent shrimp or tender shredded chicken. For the shrimp, a quick sauté with a touch of garlic and chili powder works wonders. If I’m using chicken, I often prepare it ahead of time by slow-cooking chicken breasts with some taco seasoning, making it easy to shred and add to the plate.
