High protein cheesecake & salted date caramel
15 medjool dates
100ml full-fat coconut milk
1 tsp vanilla
pinch of salt
pressed cottage cheese (i use the one from costco)
vanilla protein powder (i love the french vanilla from @just.ingredients )
3 tbsp water
graham crackers (i love @simplemills honey & cinnamon sweet thins)
combine the dates, coconut milk, vanilla, and salt in a mixer and blend until creamy. set aside.
add cottage cheese, water, and protein powder to the same mixer (no need to rinse) and blend until smooth.
in a jar, layer graham crackers, cheesecake mixture, and date caramel.
