Ghanaian beans stew is one of my all-time favorite comfort foods because it combines rich flavors with wholesome ingredients. I love using black-eyed beans, which give the stew a creamy texture once cooked thoroughly. The key to its authentic taste lies in using African palm oil, which provides a distinct deep red color and a slightly smoky flavor that's hard to replicate with other oils. When preparing the stew, I usually soak the black-eyed beans overnight to reduce cooking time, then simmer them until tender. Adding African salt fish enhances the umami profile amidst the tomatoes, fresh ginger, garlic, onions, and peppers that form the base of the stew. For an optional twist, including smoked mackerel boosts the depth of flavor even further. Seasoning is vital; I use a traditional African Maggi cube along with bay leaves, rosemary, garlic powder, and onion powder to layer the flavors beautifully. The combination of these spices gives the stew a warm and earthy aroma. One of the most versatile things about this stew is its pairings. Whether it’s served with steamed white rice, fried ripe plantains, boiled yams, or Gari (fermented cassava granules), it always makes for a hearty and satisfying meal.
