Duchess potatoes are a classic and elegant side dish that pairs wonderfully with many main courses, from roasted meats to vegetarian dishes. One key step to achieving the perfect texture and flavor is soaking the peeled and chopped russet potatoes for at least an hour, as this helps remove excess starch for a smoother mash. After boiling, ensure to drain thoroughly before mashing or using a food mill. The addition of grated parmesan cheese adds a subtle nuttiness and richness, enhancing the buttery and herbal flavors. When sautéing garlic in butter, cook until lightly browned but not burnt to develop a mellow aroma that complements the fresh rosemary. Mixing fresh parsley and chives into the potato mixture introduces bright and slightly oniony notes that balance the rich ingredients. The touch of nutmeg provides an unexpected warmth, elevating the overall taste. For piping the potatoes, use a large star tip to create beautiful, decorative shapes on a parchment-lined tray. Baking at 390°F with a fan or 425°F without allows the duchess potatoes to form a golden crust on the outside while remaining fluffy inside. Brushing with melted butter halfway through baking adds richness and helps achieve a crisp, appealing finish. Garnishing with flaky salt and fresh parsley just before serving not only boosts visual appeal but also enhances flavor, making this an impressive dish to serve at dinner parties or holiday meals. Whether you are an experienced chef or a home cook looking to upgrade your side dishes, this garlic and herb duchess potato recipe offers a guaranteed crowd-pleaser that is both simple and sophisticated.
