Small Batch Big Chocolate Chip Cookies -
Yields 5 large cookies
Ingredients:
1 cup + 2 tbsp whole wheat flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cornstarch
Pinch of salt
1/2 cup unsalted butter, softened
1/3 cup brown sugar
2 tbsp granulated sugar
1 egg
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chips
1/3 cup dark chocolate chips
Instructions:
Preheat oven to 350°F and line baking sheet with parchment paper, set aside
Mix together flour, baking powder, baking soda, cornstarch and salt, set aside
Cream together butter and both sugars until fluffy
Beat in egg and vanilla until combined and pale
Mix in the dry ingredients
Add chocolate chips
Place scoops of dough (about 5 tbsp each) on prepared baking sheet
Bake about 15 minutes, until edges start to brown
Cool on baking sheet 10 minutes then move to cooling rack
