This one tastes like an almond croissant but in cozy, baked pancake form. High protein, simple to make, and so good warm out of the oven.
Ingredients
1/4 cup quick oats or oat flour
1/4 cup almond flour
1/2 tsp baking powder
1/4 tsp baking soda
1 egg
1/2 cup cottage cheese
1–2 tbsp maple syrup (or sweetener of choice)
1 tsp vanilla extract
1 tsp almond extract
1–2 tbsp milk of choice
Sliced almonds, to top
Powdered sugar, for topping
How to
Preheat oven to 350°F.
Mix all ingredients except the sliced almonds in a bowl until combined. Pour into a greased baking dish. Top with sliced almonds.
Bake for 20–25 minutes, until set and lightly golden. Dust with powdered sugar before serving.
