This salad is everything 💚
One of my favorite summer meals to make is a big fresh salmon salad loaded with crunchy veggies, creamy cheese, and a little sweetness. It feels light but still filling, and honestly it tastes like something I’d order at a café. I love how colorful it looks too! The tomatoes, red onions, crispy almonds, and flaky salmon all come together perfectly.
Ingredients
* 1 salmon fillet
* Mixed greens or romaine lettuce
* Cherry tomatoes, sliced
* Thinly sliced red onions
* Cucumber slices
* Avocado chunks
* Feta cheese or goat cheese crumbles
* Candied or roasted almonds
* Dried cranberries or strawberries
* Corn kernels
* Olive oil
* Lemon juice
* Salt
* Black pepper
* Garlic powder
* Balsamic glaze or vinaigrette
How I Make It
First, I season my salmon with olive oil, salt, pepper, and a little garlic powder. I cook it in a pan for about 4–5 minutes on each side until it’s crispy on the outside and flaky inside. While the salmon cools slightly, I fill a large bowl with lettuce, tomatoes, onions, cucumbers, avocado, corn, cheese, almonds, and dried fruit.
Then I place the salmon right on top and drizzle everything with balsamic vinaigrette and fresh lemon juice. Sometimes I add extra cracked pepper or even a little hot honey if I want a sweet and spicy flavor.
This salad is honestly the perfect summer lunch or dinner for me. It’s fresh, crunchy, savory, sweet, and super satisfying all at once.
