✨What to make with extra ripe bananas? Make banana bread 🍌 🫶✨
One of my favorite things to bake with bananas when they are overripe is banana bread. So per usual, I take a trip to my bestie Pinterest and search for the best recipe that’ll be perfect for my banana bread craving.
Since y’all are my lemon-head besties I’ll share it with you all as well.
Cookie Butter Chocolate Chip Banana Bread
Ingredients:
- 3 ripe bananas
- 1/2 cup melted browned butter
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sour cream
- 1/2 cup cookie butter
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup chocolate chips
Instructions:
- Preheat your oven to 425°F. Grease a loaf pan.
- In your mixer bowl, mix the bananas until smooth.
- Mix in the melted brown butter, granulated sugar, brown sugar, and eggs until combined.
- Mix in the sour cream, vanilla extract, and cookie butter until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Mix the dry ingredients into the wet mixture until just combined do not overmix.
- Fold in the chocolate chips until just combined
- Pour the batter into the prepared loaf pan and smooth the top. Add chocolate chips on top, I used about 1/2 a cup.
- Bake at 425°F for 10 minutes, then without opening the oven, reduce the temperature to 350°F.
- Continue baking for 50-60 minutes. If the top starts browning too quickly, loosely tent with foil to prevent burning.
- Bake until a toothpick inserted in the center comes out with a few moist crumbs
- Let the bread rest in the pan for 15-20 minutes. Then transfer to cool completely or be like me and slice and enjoy 😅 @Lemon8 Food.
