Another holiday favorite: Rainbow Cookies! These nostalgic treats taste like home to me. While you can buy them from the store, there’s something special about making them yourself. Yes, they take some time, but learning how to bake one of my favorite holiday cookies at home was so rewarding! 🍪✨
Oh, Christmas Rainbow Cookies! Every time the holidays roll around, I get this incredible craving for them. For years, I’d just pick them up from a bakery, but a few seasons ago, I decided to tackle baking them myself. And let me tell you, it was one of the most rewarding kitchen adventures I've ever had! If you're thinking about making them, here are a few things I learned along the way that might help. First off, don't be intimidated by the layers of color. It's really just one batch of almond-flavored cookie dough divided and tinted. My biggest tip for getting those vibrant red, white (or natural), and green layers is to use gel food coloring. It gives such a deep, rich hue without adding too much liquid to your dough. And when you're spreading the dough onto your baking sheets, make sure it's really thin and even. This is key for those perfectly layered cookies that aren't too thick or dense. Chilling is your best friend when it comes to these cookies. After baking each layer and assembling them with a thin spread of apricot or raspberry jam (I prefer apricot for a less sweet balance), you absolutely need to chill the whole stack. I usually press them down gently with another baking sheet and pop them in the fridge for at least a few hours, or even overnight. This makes them much easier to cut cleanly and prevents them from falling apart when you add the chocolate coating. Speaking of chocolate, getting that perfect, shiny, crack-free chocolate shell can feel like a challenge. I’ve found that using good quality dark chocolate (or semi-sweet, depending on your preference) and tempering it slightly or using a melting chocolate that's specifically designed for dipping makes a huge difference. I like to melt about two-thirds of my chocolate, then stir in the remaining third off the heat until it's all smooth. This helps keep it from seizing and gives it that professional finish. Don't forget to do a top and bottom chocolate layer for the full experience! Once they're coated, a quick sprinkle of festive nonpareils or even just letting the chocolate set in the fridge helps seal the deal. These cookies are truly a labor of love, but every bite reminds me why I put in the effort. They store wonderfully in an airtight container for a few days, or you can even freeze them (without the chocolate coating, then add it after thawing) for longer. They make the most beautiful and thoughtful edible gifts, too. There's nothing quite like sharing a homemade taste of Christmas with loved ones!
