First, gently clean the cracked area to remove any loose debris. Then, carefully pour some extra virgin olive oil directly into the cracks. Use a damp paper towel to rub the oil in thoroughly, ensuring it fills and seals the fissures. The oil acts as a protective barrier, preventing moisture and contaminants from entering and causing spoilage. Not only does this method help maintain the cheese’s texture and flavor by sealing moisture in, but it also enhances the cheese’s natural aroma thanks to the olive oil’s richness. From personal experience, applying olive oil this way has saved several of my aging cheese wheels from turning unusable, extending their shelf life by weeks. To maximize this repair technique, store your cheese wheel in a cool, humid environment, ideally wrapped in breathable cheese paper or parchment to allow minimal air exchange while retaining moisture.
