Seriously, if you haven't tried making this at home, you are missing out! I recently whipped up a batch and it brought back so many amazing memories of my travels. It's surprisingly easy to create that vibrant, spicy, and incredibly aromatic taste right in your own kitchen. First things first, choosing your fish! I usually go for a whole snapper or sea bream – something with firm, white flesh that can hold up to all those incredible seasonings. But honestly, any robust white fish will do. The magic really happens with the marinade. This is where you infuse so much flavor! Think fresh thyme, garlic, ginger, scotch bonnet peppers (use sparingly if you're not a fan of intense heat!), pimento seeds (allspice berries), and a good splash of lime juice. Don't forget to score your fish a few times on each side; this helps the marinade really penetrate deep into the flesh, ensuring every bite is bursting with flavor. Now, for what I saw in those gorgeous pics – the green chilies and green peppercorns! 😍 These are such a game-changer. I love to stuff the fish cavity with sliced green bell peppers, onions, carrots, and a generous amount of these beautiful green chilies. Sometimes I even add a few green peppercorns for that extra zing and texture. This not only adds incredible flavor but also keeps the fish moist while it roasts. I also saw mention of white tofu pieces in the OCR, which is an interesting addition I sometimes do for extra protein and to soak up all that delicious flavorful broth. It's not strictly traditional for all Jamaican roast fish recipes, but it works wonderfully in a pot-roasted version. Speaking of roasting, you can do this in the oven or on the grill, depending on your preference. I usually go for the oven, especially if I want to create that rich, yellowish sauce or broth that simmers around the fish.
