Sear chuck roast, seasonings salt, pepper, garlic powder. Place in crock pot. Cut large white onion and saute with minced garlic and 2 tablespoons of butter. Pour on top of roast. Add can of Rotel, salt, pepper, cayenne, cilantro, paparika, chilli pepper, cumin, bay leaf. Add 2 cups beef broth. Cook 8 hours on low.

Dip tortilla in juice place on pan add Monterey jack and meat mixture. Cook on both sides for a minute.
