👩🏻🍳INGREDIENTS:
Salmon:
4 6 oz. salmon 🍣
2 tbsp honey 🍯
2 tbsp coconut aminos
1 tbsp lime juice 🍋🟩
1 tbsp sesame seed oil
1 tsp garlic 🧄
1 tsp ginger 🫚
Salt & pepper
Crispy rice:
2 cups brown rice cooked 🍚
1/3 cup avocado oil 🥑
Tahini Glaze:
1/3 cup tahini
1 tbsp olive oil
2 tbsp lime juice (1 lime)
2 tbsp honey 🍯
1/2 cup cilantro 🌿
1/2 tsp parsley
1 tsp garlic 🧄
1/4 tsp pepper
1/2 tsp salt 🧂
👩🏻🍳INSTRUCTIONS:
Preheat your oven to 450°F. Line a medium size baking sheet with foil and spray with some avocado oil. Set aside. In a small bowl or glass, measuring cup, with together the salmon ingredients: honey, coconut, amino, lime juice, sesame, oil, garlic, ginger, salt, pepper. Set aside. Heat up the avocado oil in a medium skillet over medium to medium high heat. Once hot add in your cooked brown rice. Gently press the rice down evenly in the pan with a spatula. Cook for 15 to 20 minutes or until golden. Don’t move the rice around Unless it looks like it is too dark. If it is looking dark, gently flip those pieces over onto the other side with your spatula. While your rice is cooking, also bake your salmon. Line or four pieces of salmon on your baking sheet. Seasoned with salt and pepper to taste and then brush the sauce for the salmon on top of the salmon. Bake for 10 minutes and then broil for five. While those are both cooking, make your tahini dressing (or you can make it ahead of time). Simply whisk all of the ingredients in a large glass, measuring cup, until fully incorporated: tahini, olive oil, lime juice, honey, salt, pepper, cilantro, parsley, garlic. Run a spatula underneath your crispy rice. Flip onto a plate and set aside.
Serve each plate with crispy rice, a piece of salmon, and a nice thick drizzle of the tahini dressing. Also top your plate/bowls off with some avocado, cucumber, edamame, cilantro sesame, seeds, etc. Enjoy!
