Gourmet Mozzarella and Shrimp Stuffed Salmon Fillets

Recipe

Ingredients:

1 tbsp olive oil

2 - 8 oz salmon fillets

1 tbsp minced garlic

8 oz raw shrimp, no tails

1/3 cup mayonnaise

1/4 cup Parmesan cheese

1 cup shredded mozzarella cheese

1 tsp salt

1/2 tsp pepper

Directions:

Preheat oven to 350ºF.

In a medium skillet over medium heat, heat olive oil.

Add shrimp and garlic to the skillet, stirring often to prevent burning the garlic.

Cook until shrimp are pink and opaque, then remove from heat.

Stir in mayonnaise, Parmesan cheese, and mozzarella cheese.

Place salmon fillets on a baking sheet lined with parchment paper.

Stuff the fillets with the shrimp and cheese mixture, reserving some mixture to top the fillets .

Season each fillet with salt and pepper.

Bake for 20 minutes, then remove from the oven and top each fillet with the remaining stuffing.

Broil for 5 minutes or until golden brown.
