Ingredients

For the Cake:

3 cups (375g) all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3 cups (600g) granulated sugar

1 1/2 cups (340g) unsalted butter, softened

5 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon extract

3/4 cup (180ml) 7 Up soda (not diet)

For the Glaze:

1 1/2 cups (180g) powdered sugar

2–3 tablespoons (30–45ml) lemon juice

1 tablespoon (15ml) 7 Up soda

Instructions

Preheat the Oven:

Preheat your oven to 325°F (163°C). Grease and flour a bundt pan thoroughly.

Prepare the Batter:

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream together the butter and sugar using an electric mixer until light and fluffy (about 3–5 minutes).

Add the eggs one at a time, beating well after each addition. Stir in the vanilla and lemon extracts.

Gradually add the dry ingredients to the creamed mixture, alternating with the 7 Up soda, starting and ending with the flour mixture. Mix until just combined.

Bake the Cake:

Bake in the preheated oven for 70–80 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.

Thank you for sharing the 7-Up cake. I never made a 7-Up cake but I have heard that they are pretty good and I’m not a huge baker like I used to be but that cake looks really good and I may try this in a new year.
