One crucial aspect is the strength of your starter. A weak starter often results from premature feeding before it has peaked, diluting the yeast population and slowing fermentation. From personal experience, I've found that patience is key—allowing the starter to fully peak at a warm temperature of around 75-26°C and feeding based on activity rather than a strict schedule greatly improves starter robustness. Using higher feeding ratios such as 1:5:5 or even 1:10:10 when the starter becomes acidic can also reset and strengthen it over a few feedings. Bulk fermentation is another critical phase where observation trumps clock-watching. I learned to gauge readiness not only by timing but by texture and feel — the dough should be airy, elastic, and jiggle slightly when shaken. A warmer dough requires less rise time, while cold retarding slows fermentation but develops flavor. Overproofed dough shows flat shapes and weak structure, while underproofed dough behaves slack and loose, resulting in poor oven spring and a pale crust. Proper mixing should produce a dough surface that’s smooth and slightly taut with good stretch strength. This contrast with under-mixed dough, which looks dull and uneven, often leads to dense or uneven crumb structures. Striving for an open crumb with large, irregular holes demands good hydration and proper fermentation. Finally, scoring your loaf with a confident, swift slash at a 30-45° angle about 3/4–3/2 inches deep encourages controlled expansion and creates a defined "ear"—that signature crispy edge. Poor scoring, often caused by shallow cuts, hesitant slashes, or warm dough, leads to flat loaves and random side splits. By focusing on these details and stopping the habit of guessing, your sourdough journey will become more predictable and rewarding. Each bake teaches something new, and keeping notes on starter activity, dough feel, and scoring results will steadily guide you towards baking the perfect loaf every time.
