First, let's talk about smart shopping – this is where most of your savings will come from. My number one tip for budget-friendly healthy meal prep is to plan your meals for the week. This helps you create a shopping list, stick to it, and avoid impulse buys. I always check for sales and use coupons. Buying pantry staples like rice, oats, pasta, and dried beans or lentils in bulk is a game-changer. They're incredibly affordable and form the base for countless healthy and inexpensive dinners. Don't forget to prioritize seasonal produce; it’s not only fresher and tastier but also significantly cheaper. Next, focus on versatile, cheap but nutritious meals. Eggs are your best friend – they're a protein powerhouse and incredibly adaptable for breakfast, lunch, or even a quick dinner. Lentils and chickpeas are fantastic for adding protein and fiber to soups, stews, and curries, making them super cheap healthy meals. I often make a big batch of lentil soup at the start of the week.
